{dairy-free} creamy cauliflower soup

The other evening I felt like playing in the kitchen and coming up with a new recipe and I actually had a window of time to do just that.

It doesn't always work out but this time it did and my three teens loved the Creamy Cauliflower Soup I made. It didn't hurt that I have a 'direct line' to Chef Jackie and was able to ask her a few seasoning questions! 

My body was calling for something warm and comforting and for a change a meal without meat. So I looked around my fridge and came up with broth and two heads of cauliflower. It wasn't much but it ended up being the beginning of something that felt nourishing and that we all loved.

Creamy Cauliflower Soup

Ingredients

6-8 oz. broth
1 large or 2 small heads of cauliflower, chopped
1 small onion, chopped
4 Tbsp. butter, coconut oil or ghee
3-5 cloves garlic, chopped
1 Tbsp. apple cider vinegar
1 Tbsp. unrefined salt
1-3+ pinches nutmeg
1 Tbsp. thyme
pepper to taste

Directions

Combine 6 oz. of broth with chopped cauliflower in a stockpot. Cover and cook on medium-high heat until cauliflower is nice and soft, about 20 minutes. 

While cauliflower is cooking, saute the onions on medium-low in 2 Tbsp. butter, coconut oil or ghee until soft. 

When cauliflower and onions are soft, add the sauteed onions and butter along with the remaining 2 Tbsp. butter, garlic, apple cider vinegar, salt, nutmeg and thyme to the broth/cauliflower pot. Start with just a pinch or two of nutmeg, knowing you can add more. 

Either use a immersion blender to blend right in the pot or carefully pour everything into a blender or food processor. Blend until all is nice and smooth. 

Taste and adjust seasonings. You can always add more butter (remember it's Friendly Fat!) and/or more broth if you would like a thinner soup.
