Pineapple Pico

This is the perfect combination of sweet + spicy. To serve as a dip or topping for tacos or BBQ chicken, chop pineapples and tomatoes more finely.  Chop bite-sized pieces if serving as a side salad. 

Ingredients:
2 cups pineapple, chopped
2 cups tomatoes, chopped
1/2 - 1 cup sweet onion or green onions, finely diced
1/8 cup - 1/4 cup jalapenos*, finely diced
2 cloves garlic, minced
1/2 - 3/4 cup cilantro*, chopped (or other favorite fresh herb if you don't 'do' cilantro)
1/4 cup lime juice
salt to taste

Combine all the ingredients in a bowl, cover and let the flavors mingle in the fridge for at least an hour or two. Enjoy! 

*Start out with less jalapenos and add more to taste. You can even have a little bowl on the side of the jalapenos and cilantro so people can add more if they want.
