Recipe from Chef Jackie White
This is delicious served warm or cold and of course it tastes awesome alongside a little bit of vanilla ice cream.
6 apples, peeled
2 Tbsp. lemon juice
1/2 cup coconut flour
1/2 cup raw pecans, crushed into bits
1/8 to 1/4 cup coconut palm sugar, Sucanat or Monk Fruit, depending on desired level of sweetness
3/4 tsp. cinnamon
1/4 tsp. unrefined sea salt
8 Tbsp. butter or ghee, cold
Preheat over to 375 degrees F.
Combine apples and lemon juice to keep apples from browning.
Place in a buttered 8 x 8 baking dish.
In a bowl or a food processor, mix all ingredients except butter or ghee.
Add butter or ghee and mix or pulse until combined, but still crumbly.
Sprinkle mixture over apples until covered.
Bake 25-30 minutes or until apples are soft.
